I love these muffins on Shabbos Morning, and my kids do too! It's amazing they hold together without eggs -- but they are terrific. I found this recipe on VegWeb.com
2 cups whole wheat flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 cup canola oil
1/2 cup maple syrup
1 cup water
1/2 cup frozen blueberries or other fruit of choice.
Mix the flour, baking powder, baking soda, cinnamon and salt in a bowl. Mix the canola oil, maple syrup and water together and combine with the dry ingredients. Fold in the blueberries. Pour the mix into prepared muffin pans and bake at 375 for 20-25 minutes.
