Need to get your kids (or your guests?) to calm down? This soup makes a great Friday night starter and, thanks to the cammomile, really does have a calming effect.
This recipe is from The Celestial Seasoning Cookbook: Cooking With Tea by Jennifer and Mo Siegel
You'll need:
6 Celestial Seasoning Chamomile Tea Bags (The Celestial Seasonings brand really does work best here)
3 cups of water or vegetable stock
1 large head of cauliflower cut into three pieces
1/4 cup chopped onions
2 celery stalks, chopped
2 tbsp Earth Balance Margarine
salt and pepper to taste
Directions:
Place the tea bags and water (or stock) in a soup pot and bring to a boil. Let the tea bags steep for 5 minutes and then discard them. Add the cauliflower, cover, and cook for 15 minutes, or until tender. In with a liquid and the sauteed vegetables in a blender or food processor. Puree until smooth. Add salt and pepper, and serve.
