No dairy here. Just a delicious spread for your challah!
You'll need:
4-6 large onions, sliced
water
2-3 pinches of salt
1/2 teaspoon of Light miso - optional
lots of patience :)
Place the onions in a heavy pot (cast iron works well if you have it) and add water half-cover the onions. Bring it to a boil. Add a few pinches of salt. Reduce the heat to low and simmer, covered for 2 1/2 to 8 hours. Add 1/2 tsp. white miso when finished, if desired. Watch so it does not burn!
