Surprise - No Mayo in this recipe that uses canned salmon. What replaces the mayo? Peanut butter! (Among other things)
You'll need:
1 14.75 ounce can of salmon, drained and flaked
1 11 oz can of madarin oranges (but often, I just cut up fresh, it's healthier)
1/2 cup finely chopped green onions
2 tablespoons peanut butter
1 tablespoon soy sauce
1 tablespoon fresh lemon juice
1 garlic clove, pressed
1/2 teaspoon ground ginger.
Place the salmon in a medium bowl. Add green onions, peanut butter, 1 tablespoon of soy sauce, lemon juice, garlic, and ginger. Mix well. Gently fold in the oranges and you're ready to serve with your challah!
